I recommend going through my book. Additionally, whether the reader is Indian or a foreign national, I suggest visiting a nearby accessible sugar industry. The best advice I can offer is to visit a nearby accessible SUGAR Research Institute.
Q How do you see the role of sugar in our diets changing in the future?
Carbohydrates, including sugar, sucrose, and fructose, are the primary sources of energy. Without carbohydrates, life cannot survive. In the future, the direct consumption of sugar by humans will diminish, becoming mainly a staple in patients’ diets. Sugar’s usage will largely be for medicinal purposes. However, traditional sugar-based drinks like Sharbat, Roohafza, Thandai, and others will continue to be popular. Additionally, sugar will always be in high demand in the tourism industry for its use in alcohol and related products.
Q What inspired you to write “Sugar – A Great Confession”?
Writing a book has been a dream of mine since I was young. Our Prime Minister, Mr. Narendra Damodardas Modi, always inspires me with his words, making me feel a profound sense of pride in being Indian. While working at the Hyatt Regency New Delhi under the Hyatt Corporation, I began compiling my daily journal. My initial inspirations were Mr. Jiggs Kalra and my mentor, Hyatt Corporation’s MasterChef USA, Chef Rajendra Singh Rana, along with his exceptional team.
I owe a great deal of gratitude to Professor Sanjay Kashyap, who not only guided me but also provided financial support for writing the book. I also extend my thanks to my father, Mr. Om Dutt Tomar, and the late owner of Neemrana Hotels Pvt Ltd, Francis Wacziarg.
Finally, I would like to acknowledge the inspiration and support of my loving wife, Priya Tomar. Her skills in office management, accounting, and inventory control have been invaluable. Everything I have learned from college and the teams I have worked with has shaped my journey. I pray that everyone encounters such inspirational people in their lives.

Froth, rich cream, ice cream, fudge, brownie, chocolate (both brown and white), and various types of sugar, along with Silpat, etc.
Q How is the Indian sugar industry adapting to modern demands and sustainability concerns?
The sugar industry in India has a long and rich history. Since ancient times, sugarcane farming has been practiced in India, with the technology to produce sugar from its juice being well-known to both ancient Indians and Chinese. The first sugar industry in India was established in 1602-3 in Machilipatnam and Coromandel, where sugarcane juice was used to produce sugar. During the British era, in 1903, the first sugarcane juice-producing industry was set up in Pratappur, Deoria district.
India’s first sugar research institute was established in Pusa, Samastipur, Bihar, in 1912, also during the British era, and it remains one of the oldest. This institute has developed over 100 varieties of sugarcane through its research. Today, there are a total of 216 sugar industry research institutes in India. The future of the Indian sugar industry is vast, and it is poised to lead the world in the coming years. In essence, India’s unique taste, whether in confectionery or original sugar, will be recognized globally.
Q Why is India a significant player in the sugar industry?
India is currently the second-largest producer of sugarcane, after Brazil. However, when it comes to the market for sugar and sugar-based products, India ranks number one. This achievement highlights the incredible potential of Indian sugarcane farmers, elevating the country’s status to the top of the world. The unique taste of India is recognized globally.
